The first and second level menus are placed in the template using <!--MAINMENU--> and <!--SUBMENU--> respectively, but there is a way you can nest the current submenu in the mainmenu at the selected item. This creates the effect of the menu opening out. This website does it. Instead of putting <!--MAINMENU--> in your template, put <!--TREEMENU-->.
